don't put "cafe" or "bar" in the name
A name typically does not inform the public what you are. Its simply a key to your identity. Look at names you use- do they say what they are in the title? The Stranger is far more attractive & existential than The Stranger Cafe. . .

Monkeyhouse
"Stranger" is negative, menus will change, but the fun will go ever on. My suggestion: Focus your name on your core offering

Alchemy
no sure why, maybe becasue of the experimentation aspect, but this word called out to me when reading your description of the cafe. Sounds fascinating.

go Belgian and call it Café Étranger
Though, it may be too outré

Encounter Culture
like an earlier one, but without cafe in the name, and a more subtle counter culture reference.
